So, as most of you know, I've been on a pretty regimented weight loss program. I've had some great success so far, and a lot of it stems from my healthier eating habits.
However, I am going loco trying to figure out what to do with my pollo.
Please post your healthy, chicken recipes for me. I eat chicken at least 4x a week, so I could really need some new ideas.
Salt. Pepper. Maybe an herb of your choice (I used to use oregano). Maybe a drop or two of olive oil.
Wrap loosely in foil, folding the ends up so there's no juice seepage, and not tight enough to keep the steam from escaping a little. Maybe wanna turn it over once.
Bake at 375 or so for about 20 minutes.

Chicken fajitas are a staple for me... super quick and easy.
Slice up some chicken breasts into long thin strips, marinade in lime juice (and tequila if you want... but that is extra calories), pepper, chili powder, garlic powder, cumin, and anything else you like.
Slice up similar strips of onion and bell pepper. Sweat it down in a big pan til it's soft. You can add lime juice and spices to this as well.
Cook up the chicken either in the pan with the veg, or you can remove the veg for a couple minutes and add them back in, whichever you prefer. This really only takes a couple minutes and the chicken should still be really moist.
Then all you have to do is grab some tortillas (low fat/low carb are decent enough for this... all the flavor is in the filling anyway), and low fat cheese if you want. I don't usually bother with anything else on them.

Add a 1/2 Cup Brown Rice and a 1/2 Cup of vegetables as your sides and you've got yourself a fine dinner.

3/4 cup Mr. Yoshida's Original Gourmet Sauce
1-1/2 pounds chicken breasts, boneless, skinless
non-stick cooking spray
Preparation:
Spray medium skillet with non-stick cooking spray and cook over medium heat until hot.
Add the chicken, cover and cook for 15 minutes. Turn chicken several times until cooked through.
Drain liquid from the pan and return to heat. Add Mr. Yoshida’s Original Gourmet Sauce and turn chicken to coat evenly.
Cook covered for 10 more minutes, turning chicken often to coat evenly.
Remove cover and cook for 5 minutes to reduce sauce to a glaze.

6 boneless, skinless chicken breasts
1 head white cabbage for garnish
3 tomatoes, chopped for garnish
Directions:
Prepare marinade. Place chicken breasts in a large resealable plastic bag and cover with marinade. Seal bag and place in refrigerator for at least eight hours. Grill or broil chicken until cooked through. Thinly slice cooked chicken breasts diagonally into strips. Serve chicken garnished with shredded cabbage and chopped tomato.
That's the great thing about chicken, it's like a chameleon, it can blend with anything. Well, maybe not chicken ice cream, but anyway.
Marinate in some orange and lemon juice, throw it on the grill. Love it on the grill. Adds that charred and smokey flavor. Do you need anything else?
Slice into chunks and throw it in a salad.
Marinate it in damn near any marinade or sauce and serve it with any number of veggies or rice. You could pretty much have the same dish five days in a row but with five different tastes.
Like a chameleon, I tell ya.

Those sound wonderful. I like simple recipes as well, but there are only so many ways you can grill a chicken breast.
Some of the marinades sound tasty, but since I'm also watching my sodium intake, I'll be looking for alternatives.
Chicken cooked in Caesar Salad Dressing. get the low sodium / low fat. I am sure it taste as good and since all the oil in it is left in the pan. It is better than the steak I am eating.
I like the Mr. Yoshidas. Boil it, serve over rice.
I've also made baked chicken cutlets. You can still eat them healthy by baking them. The breading is regular bread crumbs and either whole grain cereal crushed and mixed in or wheat germ mixed in. Either one gives you enough protein and fiber to kill off the carbs.
I can look up some more recipes in my diabetic cookbooks.
