Butterfly the breasts, pound thin. Stuff the breasts with Asparagus spears, breadcrumbs, shallots, and low fat cheddar cheese.
If you want, you can dip them in egg, then breadcrumbs, and fry them.
To go healthier, season the outside with your choice of spices and grill them.
