Grilled chicken recipe with lime and peppers.

INGREDIENTS:
1/2 cup olive oil
1/4 cup fresh lime juice
1 teaspoon salt
1 can diced green chile peppers (I use Victoria)
1 cut up chicken

PREPARATION:
Combine olive oil, lime juice, salt, green chile peppers. Add chicken and turn to coat well with marinade; cover and refrigerate for 2 hours, turning occasionally. Remove chicken from marinade; drain on paper towels.

Grill over medium heat for about 20 to 30 minutes, turning and basting with marinade frequently. Chicken is done when juices run clear when pierced with a fork. You can check a breast or thigh with a meat thermometer and make sure it's 180 degrees.

You can add in some sauteed mushrooms and onions. Serve along side (or ontop of) some steamed rice. Yum!

My favorite marinade is the Lawry's Havana Garlic and Lime.

It is simple and delicious

Or you could do the skewer thing. Get some Green Peppers, onions, tomatos, any other peppers (even pineapple). Skewer them all together and grill away.

Another homemade marinade-
Juice of 2 large lemons
Chilli Powder (to your liking)
Black Pepper
Red Pepper
Pinch of salt
Olive Oil
Orange Juice (fresh or boxed doesnt matter)

I like it when I dont have my other stuff around.
