I had the Wynn Buffet this past weekend. It was really good but it was expensive at $37.95. I went right for the seafood and got King Crab Legs, shrimp and I believe some Yellow tail. I made sure I got all the other goodies they had there. It was well worth the money in my mind. I ate a lot of seafood.
Lucky, we paid $41 a person when my girlfriend and I went in March. I ate all the crab legs I could to make it worth the price. Then I hear later that night that they have an all-you-can-eat Alaskan Crab Legs buffet at the Fremont for $15 a person...****!
As for nice restaurants I would love to go to Bradley Ogden's new place. Also, people say that Rao's in Caesars is very over priced.
Supposedly, Hugo's Cellar in the Four Queens is supposed to be an old school type dining room that just kicks ass. Here are some ratings for it that may help you
I must say, I haven't had some of the great restaurants in Vegas but one of my personal favorite places to go is Burger Bar in Mandalay Place. Nothing like a Kobe beef burger.

i've eaten at some pretty chic greasy spoons in Vegas. but i don't know, that one is my favorite.
i think i like the total chillaxed vibe environment the best. it really allows you to take your time and enjoy everything... and you can feel real snobby about it too.
