I'm heading to Vegas next week and will be on the lookout for a solid buffet. Don't do the buffet thing too much anymore but when I do, I like to hit up the MGM for their spread.
Any ones that have a tremendous value, or particular item that might make it worthwhile? I've been to Vegas over 50 times, but oddly don't know much about the buffet scene. Thats almost like saying Ive been to Dodger stadium time and time again but dont know too much about the hot dog situation there. Any help would be much appreciated.

I would say the Wynn has the best variety of different items on the strip.
Bellagio is very expensive, but you do get what you paid for.
Personally, I like Paris. I think the food is good, when I went last the line wasn't bad, and if you are a Diamond club member you get a special item - unlimited plates of steamed crab legs. They're warm and they're almost worth the price of the buffet alone for seafood lovers. I like the atmosphere too, the setting is a main street in Paris.
Mirage also has a modest priced one. There as well, you get what you paid for. It's a good meal, but it's not over the top like some other places are.

Rio is pretty much the best and biggest. If you go off the strip, Green Valley Ranch is pretty good. It's been a while for me, but I seem to remember Excaliber's being not all that bad. Last one I was at was Mandalay Bay and I would NOT recommend that one though. Expensive and very limited for a "buffet".

Everyday dinner- Go to the RIO. They are remodeling the seafood buffet there, but the regular one should be okay. Call before you go. Also, be prepared to wait for a while, up to an hour at times
Nice Dinner- Bellagio. Nuff said about that. The best 37.50 you will spend. Fresh Ahi Poke, fresh sushi, and the seafood is top quality. The meats are good, but I like mine cooked rare so the lamb for me personally is tough compared to what I usually like (but they are cooking for thousands and not one)
Nice Brunch- Mandalay Bay- Very nice spread. Light room and very open. Good food, with more of an asian flair.
Now the ultimate brunch is supposedly the Ballys Sterling BUffet. It is around 50 a person but good champagne, lobster and top desserts is on the table. I have never been since I am usually arriving or leaving on a Sunday
Cheap buffet that is okay- The Orleans. It is off the strip, but it is not that expensive like the Rio or Bellagio or Mandalay. Normal buffet foods done well and some choices but not a lot
Weird Buffet, but okay- Paris Village Buffet. Lots of french food for obvious reason, but the line takes forever to get through (an hour at 9 am and longer afterwards)
I think I've had almost every buffet in Las Vegas. From the lowest of the low end 'off strip' casinos, to the champaign and exotic dishes 'made while you watch' buffets. And I would absolutely have to concur with 4/10/82. . .Mandalay Bay is my fav. Pricey, but worth it. Go when you're real hungry!

Common sense says it's by design
The Rio has tons of stuff, but I thought it was OK. My favorite is at the Mirage. They have tons of stuff and it is great! Plus, they peel their shrimp and open up the crab legs. That gets big kudos in my book. Most places you have to peel the shrimp and crack open the crab legs, which is a bitch.
