Default New Salmon recipe

So my wife and I did a late Valentines Day dinner last night. Had a new recipe I found in the local paper for Salmon. You guys may like it. It is extremely easy to do.

Two Salmon filets/steaks
2 tablespoons Miso
2 tablespoons Maple Syrup
2 tablespoons water
1 teaspoon fresh lime juice

Combine Miso, Syrup, water and lime juice in mixing bowl. Use mixer or whisk and completely mix. Drizzle over salmon (I used too much - I coated it and I don't think that works best).

Heat oven to 500 degrees. Put salmon on foil covered cookie sheet. I also put asparagus on the cookie sheet, which I salted, peppered and oiled with olive oil. Heat in oven for exactly 5 minutes then turn on your broiler on high. Continue cooking until the salmon flakes or the salmon is browned.

I had never worked with Miso before and it is different. The Maple Syrup goes well with the salmon and Miso. I will add more lime juice next time as I like using it and felt it would've knocked out the sweetness even more.

Any high-end or Asian market. Try Bristol Farms. The miso comes in a container like cottage cheese and is refrigerated. It is a soy bean base product.

sounds really good and we'll try it soon, but i do reccomend putting the asparagus in those new steamer bags & microwave them for a couple of minutes they are cooked but are still crisp & bright green,those bags rock.

Don't think this is a bad idea regarding the asparagus. The salmon fillets we had were really, really thick and as a result our asparagus got pretty fried and wilted. We don't mind it that way but I could see where some people might not like it that way. When I bbq asparagus, it is always the last thing on the bbq.

This sounds tasty. Similar to Misoyaki Butterfish which is really popular in Hawaii, but done here with salmon--and the addition of maple syrup--is very intriguing.

And just an FYI for those not too familiar, a good balance of miso can be heaven, but I wouldn't go beyond the recommended measurement. As it's also used as a preservative, aside from being sweet it can also be EXTREMELY salty.

Sounds like it is worth a try.

My regular salmon recipe is mango jelly, dill, lemon slices and salt. Salt the salmon lightly, spread a little jelly, cover with thin lemon slices, sprinkle dill and bake. I also like salmon marinated in mirin or mirin/sake.

I'm a salmon fan, roenick, and love trying new ways to prepare my favorite fish. Thanks for sharing it -- I'll definitely give it a try next week!

Here's a dee-lish Glazed Salmon recipe I made for me and my better half for a recent Friday dinner. The source of the recipe is a wee bit unexpected: the cafeteria of the Anaheim Kaiser Permanente Medical Center. (The story behind the recipe: My dad and I spent the better part of a week checking in on Mom two weeks ago; she'd been admitted for pneumonia and a serious blood imbalance -- a potentially fatal combination in an 84-year-old woman. While Dad and I were there, we'd had a few meals at the cafeteria, including the aforementioned Glazed Salmon. The next day, I told the main nutritionist/meal planner at the cafeteria how good it was, and if a recipe was available. It was, and she passed along a copy of it my way. The good news: Mom was released from the hospital after a week, and she's improving by leaps and bounds each day. )

Anyway, the recipe's a cinch. The salmon was nearly restaurant quality with that first effort, if I say so myself.
GLAZED SALMON

Two (2) servings

1 tablespoon + 1 3/4 teaspoons soy sauce
2 1/2 teaspoons honey
2 1/2 teaspoons lime juice
3/4 teaspoons Dijon mustard
1/4 teaspoon ground ginger
1 3/4 teaspoons olive oil
2 8-ounce salmon filets

Whisk together soy sauce, honey, lime juice, mustard, and ginger. Heat until blaze has reduced slightly. Brush filets with oil. Spoon half of glaze on top of filets. Bake at 400 F oven until just cooked through, about 10 minutes. Top with remaining glaze, and serve.

(GSG's note: We used our handy-dandy George Foreman indoor grill for this recipe. Roughly eight to 12 minutes on the grill will do the trick, depending on how well done you prefer your fish.)
