That's awesome! I wish him (and you) the best of luck. He'll need a lot of support.
It was always something that I dreamed of as a kid and teenager but working in the industry through highschool and into college kind of soured me on the whole idea. Sometimes I look back and wish that I would have done it but I guess it's never too late...

My good friends husband is the head chef at one of the restaurants in the Royal York in Toronto. When we were there a couple of years ago, he treated us to an amazing display. Nothing off the menu - just stuff he made up in the kitchen and had sent out. I didn't eat half of it, but its amazing what they can put together.
And before you jump on me for not eating some of the stuff, I'm very picky when it comes to food and fois gras is not on my menu. It looked pretty though.

I come from a family (big Italian one!) of chefs, and Mrs. Cup is a Catering Director at a posh Pasadena Club. The food industry is a fulfilling one for those that choose it, and it does pay well given the opportunity. It is an amazing form of art!
Quick notes of caution...1) Chefs work all the days everyone else doesn't - nights, weekends, holidays, etc...2) VERY competitive industry...3) It is a "word of mouth" job...never burn a bridge...it may come back to haunt.
Lastly...a Chef's knives are his paint brushes. When he graduates check to see if the school awards them or not. If not, invest in some. They are HELLA expensive, but his the rest of his career!
