With the ridiculous quantity of quality mexican food places around I usually just pick up mexican food. Plus it helps that there is a robertos that is a 15 min walk from my house. While I don't make mexican food too often, I usually have chorizo and eggs and tortillas every Sunday. I'll make different variations, sometimes breakfast burrito style (with potatoes, bacon, cheese, etc.) but my favorite is to cook the chorizo, then take it out, put in corn tortilla triangles and let them fry in the chorizo grease. Then put the eggs in, stir, put in the chorizo, off the heat, stir, serve with cheese, hot sauce/salsa and avocado.
onions, garlic, salt, pepper, lemon, and a tall-boy... the marinating takes care of itself.
thanks a bunch for this post. it made it sound a lot easier and encouraged me to try it... which i did last night.
i home made the fries, grilled the carne asada, melted some chedder over the fries and topped it off with home made guacamole. it was SO SO SO orgasmically good.
