camembert.
the only decent brand they sell here is le chatelain, imported from normandy, france. the types made in america don't have the appropriate mold and environment that gives it the flavor i love; they come off as quite bland.

Vermont Cheddar (available at Trader Joe's)
Any Bleu Cheese, but especially the creamier ones (Wholefoods has a really good one)
Spanish Manchego, the kind that sweats when you leave it at room temperature (ask ketel about this one)
Havarti (because cheese and crackers kick ass)
Gruyere

Ill second the TJs vermont white cheddar. Amazingly good.

The Cave Aged Gruyere is very good as well.

Others I enjoy....melted Swiss! Not that cheap **** and Arbys either; a real high quality swiss melted over some ham in a toaster oven.

Seriously, at our "reception" (6 months after we were married), my wife was able to secure a quarter wheel of parm for the cheese station. WOOT!!!!

Brie and gouda are a couple of my favorites.

Every time someone mention's TJ's the more I miss it, one of the few things from Socal I wish we had in Idaho.

We are supposed to get a whole foods, but it doesn't have the charm and the cool food TJ's gets.

I am a cheese lover as well and like just about everything that I have tasted except goat cheese. Favorites; Any sharp cheddar, swiss, gorgonzola.
Favorite use of a cheese so far; wife makes a sandwich using an herbed focacia bread, and chipotle mayo. On that she puts grilled portabella mushrooms ( grilled w/ olive oil,w/seasonings), grilled red bell peppers, and grilled vidalia oninons. All that w/ large pieces of Fontina cheese. Yum!

Boschetto al Tartufo Bianchetto - it's a blend of cow's and sheep's milk with shaved white truffle. It's melt in your mouth good. Try it in a grilled cheese sandwich. WOW.

I'm also a fan of Idiazabal and for blue-type cheese, Cabrales.

same here.

right now, i'm really digging on the Basque Shepherd's cheese from Trader Joes... actually, i'm really preferring any cheese made from Sheep's milk lately.

if any of you hit the Bevmo for some reason, on your way out, grab some of the dill Havarti. that s*** is always a hit at gatherings.
