So far since I moved to Las Vegas...I haven't found any decent places for Chinese food... I sure as hell won't recommend the ptomaine on a shingle that they're passing off as Chinese at the El Cortez... It took me six days to recover from that experience...
I know there's a few places around that serve good Chinese...but none that would stand out in order for me to give them a second try...
But outside of the realm of Chinese food...I doubt anything can beat the Slots-A-Fun hot dog...smothered in chili and onions...at least where hot dogs are concerned here...
I think I may have found one close to the Red Rock Station casino... Ho Ho Ho Chinese Cuisine... It's only twenty miles from where I live though and if I take the declawed CAT (transit...that is) I can guarantee myself a seat going home...

I'm surprised it didn't scare you off when you drove by the place.
Anyways, I have been to the "Ming" at the IP and it was really good.
But I don't know any of the places off the strip.

They call it the El Commode for a reason... I do like Careful Kitty's though...especially their prime rib... Other than that...you'd pretty much find me at the sub place across the street... It's one of the better ones I've been to since I moved from Huntington Beach...
There's a place inside New York, New York that is pretty damn good.
The prices were reasonable there...but I just wished their Kung Pao Chicken was a bit hotter though... The taste is there...just not the heat... The worst part is getting from downtown Las Vegas... Either way I go...it takes two hours...by bus...

They used to have this outstanding dish that is apparently no longer on their menu. It was something like a spicy mint beef skewer over a bed of garlic rice with stir-fried shallots. Yum...
