Picked up some Chinook salmon over the weekend and while Chinook isnt nearly Copper River in Quality this was the best salmon Ive ever had.
I used the Chef Paul Salmon Magic and applied liberally. Right before cooking I appiled another coating of the Salmon Magic. I then cooked it on a Cedar Plank and threw in some additional chips for good measure. Easily the best Salmon Ive ever had. I actually prefer Halibut to be quite honest but after this I have to say I cant wait to cook it again.

That looks really tasty. I'm not real confident with cooking fish of any kind...but I loves me some BBQ salmon, so I'll have to make an effort this summer to master it. Is that seasoning available in regular ol' markets?
There's a place in Minnesota called Kendall's, it's a family place up north I believe, and they have the best smoked salmon in the world. My family goes there all time, and when I visit, I always have to go there. I think you can actually order it online and have it shipped. I would highly recommend checking it out. I'll see if I can find a web site... Alright no website, but here's the info:

I think they just had that place featured on Bizarre Foods....the smoked fish certainly looked much better the then luskfish.
I watched this show last night (Minnesota) on my DVR and Russ Kendall's Smoke House was featured! What a coincidence! I really want to try their stuff now.

I am the same way. Halibut > Salmon, although I still enjoy salmon when its prepared to my expectations. I usually prepare it with olive oil, garlic salt, and a ton of cajun seasoning on both sides. Wrap it in foil, put it on the grill and that is some good **** right there ! I noticed that you cooked it on a piece of wood or something? What does that do?

That's crazy!! There isn't really "bizarre" food there, but alright... =) I LOVE that place. Russ Kendall passed away a few years back, but the place is still awesome.. He has all these statements from casinos of all this money he won all over the walls. He was an OG big balla'... =)

Its a cedar plank, you soak it in water and cook the salmon or whatever meat you choose right on top. Its a one two punch in that the plank gets hot which helps cook the food and the bottom burns and smokes thus adding more flavor to the meat.
RR- I own all of those seasonings and theyre all great. I always use the Poultry Magic on my thanksgiving bird but it would also be great on Beer Can Chicken. The BBQ magic is very good as well but tends to be a bit spicier then one would expect. Ive never done it but it would be awesome mixed with some good ground beef for burgers and what not.
As for Salmon Magic-its got a nice balance of dill, garlic, and mustard seed. Hard to describe per se but easily the best rub you could come up with specifically for salmon.
