Can second Cheesburger In Paradise. Also a good breakfast restaurant in Lahina right near the banyan tree where they serve macadama nut pancakes with coconut syrup. Can't eat them often but they are good for a vacation.
Mama's Fish House could very well be my favorite restaurant anywhere. Pricey, but well worth it. They change the menu daily (based on what is caught) and (I hear, but don't remember for myself) they list who caught everything on the menu. They don't serve anything more than a day old.

Lunch at Mama's is a good way to eat there for a few bucks less. Be warned that they do close between lunch and dinner.

Mixed Bowl next to the Old Lahaina Luau is a pretty good place to eat. Good Coconut shrimp and an awesome burger! Shaka pizza in Kihei also kicks butt for the thin crust folk
