Chicken fajitas are a staple for me... super quick and easy.
Slice up some chicken breasts into long thin strips, marinade in lime juice (and tequila if you want... but that is extra calories), pepper, chili powder, garlic powder, cumin, and anything else you like.
Slice up similar strips of onion and bell pepper. Sweat it down in a big pan til it's soft. You can add lime juice and spices to this as well.
Cook up the chicken either in the pan with the veg, or you can remove the veg for a couple minutes and add them back in, whichever you prefer. This really only takes a couple minutes and the chicken should still be really moist.
Then all you have to do is grab some tortillas (low fat/low carb are decent enough for this... all the flavor is in the filling anyway), and low fat cheese if you want. I don't usually bother with anything else on them. |
